Hearty Lamb & Chakalaka Stew

Ingredients:

  • 3 Tbsp olive oil
  • 800g stewing lamb
  • 1 onion, chopped
  • 2 carrots, peeled & chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, chopped
  • 1 ½ Tbsp tomato paste
  • 1 tin chopped & peeled tomatoes
  • 1 tin KOO Chakalaka
  • 2 cups beef stock
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • salt & pepper to taste
  • ¼ cup Mr’s Balls Chutney

To serve:

  • Tastic Basmati Rice

How To Make Hearty Lamb & Chakalaka Stew

  1. Heat olive oil in a large pot over medium heat, add lamb pieces and brown them on all sides, for about 5 minutes.
  2. Remove the lamb from the pot and set aside.
  3. To the same pot add onions, carrots, celery and garlic and cook for a few minutes, then add in tomato paste and allow it to cook for about 1 minute then add in the lamb along with chakalaka, tinned tomatoes and beef stock, give it a stir and add in fresh herbs, then cover with a lid and allow this to simmer on medium heat for 1 hour, season to taste with salt & pepper.
  4. Stir in ¼ cup of chutney just before serving.
  5. Serve immediately with basmati rice and garnish with fresh chopped parsley.
