
Hearty Lamb & Chakalaka Stew

Ingredients:
- 3 Tbsp olive oil
- 800g stewing lamb
- 1 onion, chopped
- 2 carrots, peeled & chopped
- 2 stalks celery, chopped
- 2 cloves garlic, chopped
- 1 ½ Tbsp tomato paste
- 1 tin chopped & peeled tomatoes
- 1 tin KOO Chakalaka
- 2 cups beef stock
- 4 sprigs fresh thyme
- 4 sprigs fresh rosemary
- salt & pepper to taste
- ¼ cup Mr’s Balls Chutney
To serve:
- Tastic Basmati Rice
How To Make Hearty Lamb & Chakalaka Stew
- Heat olive oil in a large pot over medium heat, add lamb pieces and brown them on all sides, for about 5 minutes.
- Remove the lamb from the pot and set aside.
- To the same pot add onions, carrots, celery and garlic and cook for a few minutes, then add in tomato paste and allow it to cook for about 1 minute then add in the lamb along with chakalaka, tinned tomatoes and beef stock, give it a stir and add in fresh herbs, then cover with a lid and allow this to simmer on medium heat for 1 hour, season to taste with salt & pepper.
- Stir in ¼ cup of chutney just before serving.
- Serve immediately with basmati rice and garnish with fresh chopped parsley.
