Mrs Balls Spicy Chutney Eggs

Our presenters add a festive twist with Mrs Balls Spicy Chutney Eggs – a quick and flavourful dish featuring Mrs Balls Jalapeño Chutney and eggs, perfect for holiday gatherings.

Serves: 6
Preparation time: 10 minutes 
Cooking time: 20 – 30 minutes

Ingredients:

 

  • 2 Tbsp olive oil 
  • 1 onion, finely chopped
  • 2 chilies, chopped
  • 2 cloves garlic, minced 
  • 2 tsp fresh ginger, grated
  • 1 tsp chili powder
  • ½ tsp smoked paprika 
  • 1 tsp ground cumin
  • 1 tin chopped tomatoes 
  • 1 cup Mrs Balls Jalapeño Chutney
  • Salt & pepper to taste 
  • 6 eggs 

To serve:

  • Toasted ciabatta or any bread of your choice
  • Fresh coriander

How To Make Spicy Eggs

  1. Heat olive oil in a large non-stick pan over medium heat. Add the onion and chilies, sauté until softened, then stir in garlic and ginger. Allow this to cook for a few minutes until fragrant. 
  2. Add in the spices and cook for about 1 – 2 minutes. Pour in the tinned tomatoes and allow it to simmer for a few minutes, stir in the Mrs Balls Jalapeño Chutney, season to taste with salt & pepper. 
  3. Allow the sauce to cook for about 2 minutes, then use a spoon and make six small wells, carefully crack the eggs into the wells. 
  4. Cover with a lid, reduce the heat to low and allow the eggs to cook for 5 – 6 minutes. Serve immediately with toasted bread, swirl an extra spoonful of Mr’s Balls Jalapeño Chutney and garnish with fresh coriander. 
  5. Enjoy!

Chefs Tip:
If the dish is too spicy, add a dollop of plain yogurt, a splash of cream, or a sprinkle of sugar to balance the heat and acidity.
Ensure the skillet is evenly heated before cracking the eggs to cook them uniformly. You can also baste the eggs with some sauce to speed up cooking.
