
Spicy Thai Noodles
Spice up your weeknight meals with this Thai-inspired noodle recipe!

Cooking time: 15 – 20 minutes
Ingredients:
- 250g rice noodles
- 2 Tbsp olive oil
- 3 cloves garlic, minced
- 2 Tbsp Thai red curry paste, store-bought
- 1 red pepper, sliced
- 1 green pepper, sliced
- 2 carrots, peeled & julienned
- 2 Tbsp soy sauce
- Zest & juice of 1 lime
- To serve:
- coriander
- sesame seeds
- cashew nuts, optional
How To Make Spicy Thai Noodles
- Cook the rice noodles according to packet instructions, then drain and set aside.
- Heat olive oil in a large pan or wok over medium heat, then add in garlic and Thai red curry paste, then stir-fry until fragrant.
- Add in peppers and carrots then stir-fry for 4 – 5 minutes until the vegetables are crispy and tender.
- Add in the cooked noodles and toss well, then add in soy sauce and cook for another 2 – 3 minutes, remove from the heat squeeze in lime juice and sprinkle over the lime zest, give it another toss then serve immediately.
- Garnish with coriander and sesame seeds.
