Spicy Thai Noodles

Spice up your weeknight meals with this Thai-inspired noodle recipe!

Cooking time: 15 – 20 minutes

Ingredients:

  • 250g rice noodles
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 2 Tbsp Thai red curry paste, store-bought
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 2 carrots, peeled & julienned
  • 2 Tbsp soy sauce
  • Zest & juice of 1 lime
  • To serve:
  • coriander
  • sesame seeds
  • cashew nuts, optional

How To Make Spicy Thai Noodles

  1. Cook the rice noodles according to packet instructions, then drain and set aside.
  2. Heat olive oil in a large pan or wok over medium heat, then add in garlic and Thai red curry paste, then stir-fry until fragrant.
  3. Add in peppers and carrots then stir-fry for 4 – 5 minutes until the vegetables are crispy and tender.
  4. Add in the cooked noodles and toss well, then add in soy sauce and cook for another 2 – 3 minutes, remove from the heat squeeze in lime juice and sprinkle over the lime zest, give it another toss then serve immediately.
  5. Garnish with coriander and sesame seeds.
