Sticky Chicken Rice Bowl

Ingredients:

  • 2 cups of rice, cooked
  • 3 large chicken breasts
  • 2 Tbsp olive oil
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 2 small heads of broccoli, chopped
  • For the sticky sauce:
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves of garlic, minced
  • 2 Tbsp siracha sauce
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp cornstarch

For the spicy mayo:

  • ½ cup mayonnaise
  • 1 Tbsp siracha
  • 2-3 Tbsp of water

To serve:

  • Sesame seeds

How To Make Sticky Chicken Rice Bowl

  1. Preheat an air fryer to 200°C.
  2. Cook rice according to package instructions.
  3. In a pot of boiling water, steam the broccoli until fork tender.
  4. Cut the chicken into small bite sized pieces.
  5. In a large bowl put the chicken, oil and all spices and toss together.
  6. Cook the chicken in the air fryer for 12 minutes.
  7. Now onto the sticky sauce.
  8. In a small saucepan over medium heat, add soy sauce, honey, rice vinegar, garlic sesame oil and ground ginger.
  9. Bring to a boil.
  10. Once boiling, add the cornstarch paste.
  11. Stir and let it boil until the sauce has thickened greatly.
  12. For the Mayo.
  13. In a medium bowl, mix all the ingredients.
  14. To assemble, drizzle on top the mayo sauce and garnish with sesame seeds
