
Sticky Chicken Rice Bowl

Ingredients:
- 2 cups of rice, cooked
- 3 large chicken breasts
- 2 Tbsp olive oil
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp oregano
- 2 small heads of broccoli, chopped
- For the sticky sauce:
- ½ cup soy sauce
- ½ cup honey
- ¼ cup rice vinegar
- 3 cloves of garlic, minced
- 2 Tbsp siracha sauce
- 2 tsp sesame oil
- 1 tsp ground ginger
- 2 tsp cornstarch
For the spicy mayo:
- ½ cup mayonnaise
- 1 Tbsp siracha
- 2-3 Tbsp of water
To serve:
- Sesame seeds
How To Make Sticky Chicken Rice Bowl
- Preheat an air fryer to 200°C.
- Cook rice according to package instructions.
- In a pot of boiling water, steam the broccoli until fork tender.
- Cut the chicken into small bite sized pieces.
- In a large bowl put the chicken, oil and all spices and toss together.
- Cook the chicken in the air fryer for 12 minutes.
- Now onto the sticky sauce.
- In a small saucepan over medium heat, add soy sauce, honey, rice vinegar, garlic sesame oil and ground ginger.
- Bring to a boil.
- Once boiling, add the cornstarch paste.
- Stir and let it boil until the sauce has thickened greatly.
- For the Mayo.
- In a medium bowl, mix all the ingredients.
- To assemble, drizzle on top the mayo sauce and garnish with sesame seeds
