Stuffed Sourdough with Brie & Mixed Berry Sauce
Sourdough with a twist!
Serves: 6–8
Preparation time: 10 minutes
Cooking time: 15–20 minutes
Ingredients:
- 1 medium sourdough loaf
- 2 x 125g brie cheese, sliced
- ½ cup mixed berry sauce
- 2 tbsp unsalted butter, melted
- 1 clove garlic, finely minced
- 1 Tbsp fresh rosemary or thyme, chopped (or 1 tsp dried)
- Freshly ground black pepper, to taste
Optional garnish:
- chopped toasted almonds, fresh mint, or sea salt flakes
For the sauce:
- 1 cup mixed berries (fresh or frozen — strawberries, blueberries, raspberries, blackberries)
- 2 Tbsp sugar (adjust to taste)
- 1 tsp lemon juice
How To Make Stuffed Sourdough with Brie & Mixed Berry Sauce
- In a small saucepan over medium heat, combine berries, sugar, and lemon juice.
- Simmer for 8–10 minutes, stirring occasionally, until the berries burst and the sauce thickens slightly.
- Stir in vanilla if using, then let cool slightly before using.
- Preheat the oven to 175°C.
- Line a baking sheet with baking paper.
- Place the loaf on a cutting board.
- Cut deep crosshatch slices across the top, being careful not to cut through the bottom.
- You should have a pull-apart grid pattern.
- Slice the Brie into small wedges or cubes.
- Mix the melted butter, garlic, and herbs in a small bowl.
- Gently pull apart the bread sections and tuck Brie pieces into the gaps.
- Spoon mixed berry sauce between the slices.
- Brush the top with the herbed butter mixture, letting it soak into the cuts.
- Wrap the loaf loosely in foil and place it on the baking sheet.
- Bake for 10–12 minutes, until the cheese melts.
- Unwrap and bake for another 5–8 minutes to crisp the top.
- Sprinkle with fresh mint, almonds, or a dash of pepper.
