Super M Vanilla Choc Chip Cupcakes

The perfect Gap Filla for a mid-afternoon pick-me-up!

230g Vanilla Cupcake mix
1 extra large egg
60ml cooking oil
100ml Super M, Vanilla flavor
1 cup dark chocolate

For the icing
250g icing sugar
125g butter
25ml Super M, Vanilla flavor



Preheat oven to 180C
Whisk together the egg, oil and Super M flavoured milk. Add in the cupcake mix and choc chips. Mix until combined.

Place paper cups into muffin tin and spoon equal quantities of the batter into the paper cups. Bake for 10-15 minutes.
Make the icing by beating together the butter and icing sugar together, then gradually add the Super M.

Once cupcakes are cooled, pipe with icing and garnish with choc chips

Chefs Tip: You can use any of your favourite Super M flavours for this recipe – like chocolate or banana flavour.

For a crunchy texture, add some chopped nuts and if you have a sweet tooth, add caramel to the mixture or as the icing.
