Taiwanese Dan Bing (Savory Egg Crepes)

Ingredients:

For Dan Bing:

  • ½ cup all-purpose flour
  • ½ cup water
  • 1 tbsp cornstarch
  • ¼ tsp salt
  • 3 Nulaid eggs
  • 2 tbsp milk
  • 2 spring onions, finely chopped
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil (for frying)

Optional fillings:

  • ham, cheese, sautéed mushrooms, or cooked bacon

For Dipping Sauce (to serve):

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp chili flakes (optional for a spicy kick)
  • 1 tbsp finely chopped green onions
  • 1 tsp toasted sesame seeds

How To Make Taiwanese Dan Bing (Savory Egg Crepes)

  1. For Dan Bing: In a bowl, whisk together flour, cornstarch, salt, and water until smooth.
  2. In a separate bowl, beat the eggs with milk, soy sauce, sesame oil, and spring onions.
  3. Heat a non-stick pan over medium heat and brush with vegetable oil.
  4. Pour a thin layer of the flour batter into the pan, swirling to coat the bottom evenly.
  5. Cook for 1-2 minutes until slightly set.
  6. Pour a portion of the egg mixture over the crepe, tilting the pan to distribute evenly.
  7. Let it cook for another 1-2 minutes until the eggs are set.
  8. Add Fillings (Optional): Place any additional fillings on top, then gently roll up the crepe using a spatula.
  9. Slice into bite-sized pieces and serve warm with soy sauce, hoisin sauce, or chili paste for dipping.
  10. For Dipping Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sugar until smooth.
  11. Add chili flakes (if using), green onions, and sesame seeds.
