Taiwanese Dan Bing (Savory Egg Crepes)

Ingredients:
For Dan Bing:
- ½ cup all-purpose flour
- ½ cup water
- 1 tbsp cornstarch
- ¼ tsp salt
- 3 Nulaid eggs
- 2 tbsp milk
- 2 spring onions, finely chopped
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1 tbsp vegetable oil (for frying)
Optional fillings:
- ham, cheese, sautéed mushrooms, or cooked bacon
For Dipping Sauce (to serve):
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sugar
- 1/2 tsp chili flakes (optional for a spicy kick)
- 1 tbsp finely chopped green onions
- 1 tsp toasted sesame seeds
How To Make Taiwanese Dan Bing (Savory Egg Crepes)
- For Dan Bing: In a bowl, whisk together flour, cornstarch, salt, and water until smooth.
- In a separate bowl, beat the eggs with milk, soy sauce, sesame oil, and spring onions.
- Heat a non-stick pan over medium heat and brush with vegetable oil.
- Pour a thin layer of the flour batter into the pan, swirling to coat the bottom evenly.
- Cook for 1-2 minutes until slightly set.
- Pour a portion of the egg mixture over the crepe, tilting the pan to distribute evenly.
- Let it cook for another 1-2 minutes until the eggs are set.
- Add Fillings (Optional): Place any additional fillings on top, then gently roll up the crepe using a spatula.
- Slice into bite-sized pieces and serve warm with soy sauce, hoisin sauce, or chili paste for dipping.
- For Dipping Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sugar until smooth.
- Add chili flakes (if using), green onions, and sesame seeds.
- Stir well to combine and let it sit for 5 minutes to allow the flavours to meld.
- Serve as a dipping sauce for your Dan Bing or drizzle over the egg crepes for extra flavour.
