Thai Peanut Satay Skewers with Peanut Butter Sauce
That classic Thai twist we all crave!
Ingredients:
- 600 g boneless chicken thighs, cut into 2 cm pieces
- Bamboo skewers (soaked in water if wooden)
For the marinade:
- 1 tbsp curry powder
- 2 tsp red curry paste
- 1 tsp salt
- 1 tsp sugar
- ¼ cup coconut milk
For the sauce
- ¾ cup YUM YUM peanut butter
- ¾ cup coconut milk
- 2 tbsp soy sauce
- ½ tbsp sugar (or alternative sweetener)
- 2 tbsp white- vinegar or lime juice.
- Garnish: chopped peanuts, lime wedges, fresh coriander (optional)
How To Make Thai Peanut Satay Skewers with Peanut Butter Sauce
- Thread the chicken pieces onto the skewers.
- Combine the marinade ingredients and coat the chicken.
- Let marinate for at minimum 20 minutes (longer if possible).
- While the chicken marinates, whisk the sauce ingredients in a saucepan over low-medium heat until smooth and warmed through.
- Cook the skewers on a grill pan or under a grill for about 3-5 minutes per side, until cooked through and lightly charred.
- Serve the skewers with the peanut butter sauce on the side and sprinkle chopped peanuts and lime wedges for garnish.
