Ingredients:
For the sliders
- 1 whole rotessierie chicken, shredded
- 6 hamburger rolls
- 2 cups Shredded cheese
For the sauce
- ½ cup Unsalted butter, melted
- ¼ cup BBQ sauce
- ½ cup chipotle sauce
- Garlic butter
- ¼ cup unsalted butter, melted
- 3-4 cloves garlic, minced
- Italian Parsley
How To Make Buffalo Chipotle Sliders
- Start by making the sauce.
- Melt butter in a saucepan over low heat.
- Add the sauces and stir to combine.
- Add the shredded chicken and mix until combine.
- Cut the buns in half and place a few spoonful’s of the chicken on each of the bases.
- Sprinkle with the cheese and place the tops on.
- Combine all of the ingredients for the garlic butter in a bowl and baste the top of the buns with the garlic butter.
- Bake in the oven at 180 c for 15-20 minutes.

For the cowboy butter
- 100g unsalted Butter
- 2 tsp Paprika
- 1/2 tsp Cayenne pepper
- 1 tsp smoked Chilli flakes
- 2 cloves Garlic – crushed
- 1 Tbsp Dijon Mustard
- 1 Tbsp chopped Chives
- 1/2 Tbsp Italian parsley, chopped
- 1 Lemon – zest and juice
- salt and pepper to taste
For the steak cubes
- 500g steak cubes
- salt and pepper to taste
- drizzle of olive oil
to serve - mashed potato
- caramelised onions
How To Make Cowboy Butter Steak Cubes with Mash and Caramelised Onions
- Melt butter in a saucepan on low heat.
- Add all ingredients listed above and whisk well to combine.
- Remove from heat and set aside at room temperature until ready to serve.
- For the Steak: Season steak cubes with salt and pepper then sear on all sides in a pan over medium to high heat with a drizzle of olive oil.
- Remove from the pan and coat with your cowboy butter.
- Serve with mashed potatoes and caramelized onions

- 500g chicken breast cut into cubes
- 2 Tbsp olive oil
- 4-5 Cloves Garlic mashed
- ¾ Cup Sun-Dried Tomatoes in oil, strained
- 2 tsp Italian seasoning
- 2 tsp Paprika
- Salt and pepper to taste
- 1 cup Orzo
- 2 cups chicken stock
- ¾ Cup coconut milk
- 2 -3 cups a baby spinach
- ¾ Cup Parmesan Cheese, grated
How To Make One Pan Marry Me Chicken Orzo
- Pat the chicken breasts dry with a paper towel and slice them into cubes.
- Heat a frying pan, on the stove, over medium heat, and add in the oil.
- Cook chicken for 2-3 minutes.
- Then, add in the sun-dried tomatoes, garlic, italian seasoning, paprika, sea salt, and black pepper, and cook for 3-4 more minutes.
- Add in the orzo and broth and stir well.
- Reduce the heat to medium, then cover the pan and allow it to cook for 12 minutes.
- Remove the cover every few minutes and stir, to ensure that the orzo doesn’t stick to the bottom of the pan.
- Once the orzo is cooked through, add in the coconut milk and spinach and stir until the spinach is wilted.
- Finally, add in the freshly-grated parmesan cheese and stir one last time.
