Tomato Bredie

A spoonful of bredie is a spoonful of comfort.

Ingredients:

The Stew:

  • 1 kg red meat (lamb, mutton, or beef) cut into 15 pieces
  • 7 potatoes, peeled and halved
  • 3 onions, peeled and finely chopped
  • 1 tin chopped tomatoes
  • 200g tomato paste
  • 4 tbsp vegetable oil
  • Salt to taste
  • 1 tbsp freshly ground black pepper
  • 3-4 tbsp sugar (to balance the acidity)
  • 2 whole chillies (optional)
  • 3 allspice berries (optional)
  • 1 tsp garlic, finely chopped (optional)

To Serve:

  • rice or buttered bread

How To Make Tomato Bredie

  1. In a large pot on medium heat, heat oil and add onions and allspice.
  2. Fry until the onions are brown. Add the meat and fry with the onions until very brown to intensify the color and flavor. Add the black pepper, salt, and whole chillies.
  3. Add a cup of warm water and simmer on medium heat until the water has cooked away.
  4. Repeat this process two or three times until the meat is almost tender.
  5. Add the tomato paste, tinned tomatoes and sugar.
  6. Do not add water yet; allow the tomato mixture to cook through and infuse into the meat by stirring while braising for about 5 minutes.
  7. Add the potatoes and 1 ½ cups of warm water.
  8. Cook on medium-to-high heat for 10 minutes, stirring once or twice.
  9. Allow to simmer for another 10 minutes or until the potatoes are tender.
  10. Serve with rice or buttered bread.
