Umfino Pap with Peri Peri Chicken Thighs
Umfino is maize meal cooked with leafy green vegetables like spinach, kale and swiss chard.
Ingredients:
- 2 c ACE Quick Cook Maize Meal (approximately 2 cups)
- 4 ½ c water
- 200 g spinach, finely chopped
- salt to taste
- big knob of butter
- Chicken Marinade
- 4 T peri-peri sauce
- 4 T Crosse & Blackwell Tangy Mayonnaise
- 2 T Mrs Balls Hot Chutney
- 1 T lemon juice
- Chicken
- 6-8 thicken thighs
- salt and pepper to taste
- To serve
- Fresh parsley, chopped
- Chillies
- Fresh spinach leaves
How To Make
- Bring water to boil. Add salt, ACE Quick Cook Maize Meal and spinach.
- Mix with fork to avoid lumps.
- Once blended mix with a strong spoon.
- Turn heat down to medium and cook with lid on for 10 minutes until desired texture is reached, stirring occasionally.
- Add butter, stir through and serve.
- For the chicken: Mix all the marinade ingredients together and marinade the chicken for about 30 minutes.
- Season the chicken with salt and pepper to taste.
- Braai over medium coals or the chicken in the oven till done.
- Turn and baste the meat and while cooking.
