Umfino Pap with Peri Peri Chicken Thighs

Umfino is maize meal cooked with leafy green vegetables like spinach, kale and swiss chard.


  • 2 c ACE Quick Cook Maize Meal (approximately 2 cups)
  • 4 ½ c water
  • 200 g spinach, finely chopped
  • salt to taste
  • big knob of butter
  • Chicken Marinade
  • 4 T peri-peri sauce
  • 4 T Crosse & Blackwell Tangy Mayonnaise
  • 2 T Mrs Balls Hot Chutney
  • 1 T lemon juice
  • Chicken
  • 6-8 thicken thighs
  • salt and pepper to taste
  • To serve
  • Fresh parsley, chopped
  • Chillies
  • Fresh spinach leaves

How To Make

  1. Bring water to boil. Add salt, ACE Quick Cook Maize Meal and spinach.
  2. Mix with fork to avoid lumps.
  3. Once blended mix with a strong spoon.
  4. Turn heat down to medium and cook with lid on for 10 minutes until desired texture is reached, stirring occasionally.
  5. Add butter, stir through and serve.
  6.  For the chicken: Mix all the marinade ingredients together and marinade the chicken for about 30 minutes.
  7. Season the chicken with salt and pepper to taste.
  8. Braai over medium coals or the chicken in the oven till done.
  9. Turn and baste the meat and while cooking.
