
Vanilla Custard & Grilled Stone Fruit Croissantinis
A festive, easy-to-make treat perfect for sharing around the table this holiday season!

Cooking time: 10 – 15 minutes
Ingredients:
- 1 cup fresh cream, whipped
- 1 ½ cups Clover Custard
- 1 Tbsp icing sugar
- 1 cup tinned apricots, drained and halved
- 1 cup tinned peaches, drained
- 4 croissants
- 2 Tbsp butter
To serve:
- honey
- fresh mint sprigs
- chopped nuts
How To Make Vanilla Custard & Grilled Stone Fruit Croissantinis
- In a mixing bowl, combine the cream, custard, and icing sugar, use a hand mixer and whip the mixture until soft peaks form and it becomes light and fluffy.
- Preheat a griddle pan over medium-high heat.
- Grill the tinned peaches & apricots for about 2-3 minutes until grill marks appear, then remove from the pan and allow it to cool slightly, meanwhile slice the croissants in half lengthwise and cut into each croissant into 4, then butter the cut side and toast on the griddle pan until golden and crispy.
- Spread a generous amount of whipped custard onto each toasted croissant quarter, top with grilled tinned fruit, drizzle over a generous amount of honey, garnish with fresh mint & chopped nuts.
Chefs Tip: 1. Use fresh stoned fruit like peaches & apricots when they are in season, grilling fresh fruit adds extra flavour to the dish.
2. When whipping the cream, make sure it’s chilled as cold cream whips faster and holds its shape better. Be careful not to overwhip, stop whipping when soft peaks form to achieve a light and fluffy texture.
3. You can prepare the whipped custard ahead of time and store it in the fridge for a few hours.
