
Vegetable Breakfast Hash
We’re turning humble, seasonal veggies into a breakfast masterpiece!
Serves: 4
Preparation time: 12 – minutes
Cooking time: 25 – 35 minutes
Ingredients:
- 2 Tbsp olive oil
- 4 rashers bacon, chopped
- 1 red onion, chopped
- 1 garlic clove, minced
- 1 cup butternut, chopped
- 2 medium sweet potatoes, peeled & diced
- 2 carrots, peeled & chopped
- 4 baby marrows, diced
- 1 handful spinach
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Salt & pepper
To serve:
- Fried eggs
- Ciabatta or sourdough, toasted
- Feta cheese
- Fresh herbs
How To Make Vegetable Breakfast Hash
- Heat oil in a large skillet over medium heat, add in bacon and fry until crispy.
- Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan.
- Add in some butter along with onions and garlic for a few minutes, then add in sweet potatoes, butternut and carrot.
- Season with paprika, cumin, salt & pepper.
- Cook for 10 – 12 minutes, stirring occasionally until the vegetables start to brown and soften.
- Add a splash of water and cover the pan for 5 minutes to help steam the vegetables, stir in baby spinach and cook for a few minutes until wilted.
- Return the bacon to the pan cook for about 1 minutes.
- Serve immediately with fried eggs, toasted bread and sprinkle over some feta cheese.
