The best inspiration to get the fam to eat their veggies.
Serves: 4-5 Time: 20 minutes
Ingredients:
2 carrots, peeled and roughly chopped 1 large potato, chopped 1 cup butternut, chopped 2 cloves garlic
For the sauce 2 tbsp butter 2 tbsp flour 1-2 cups milk 1 ½ cup Cheddar cheese, grated 2 jalapenos, chopped Salt and pepper to taste 500g cooked macaroni 1 cup salsa/pasta sauce Grated cheddar cheese for topping
Method:
Place the veggies into a saucepan, season with salt and pepper and cover with water. Boil until tender, place into a blender and blend until smooth. Make the sauce by melting the butter and sprinkling over the flour. Gradually add in the milk whilst stirring, until the sauce starts to slightly thicken. Stir in the cheese and jalapenos and the veggie sauce.
Place the macaroni into an oven safe dish and stir in the salsa/pasta sauce. Pour over the cheese sauce and top with grated cheese. Bake for 15-20 minutes at 180C and serve warm.
