Viral Matilda Cake

Rich, gooey, and just as over-the-top as you remember from the movie!

 

Ingredients:

For the cake:

  • 1¾ cups (220g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 1½ tsp baking powder
  • 1½ tsp bicarbonate of soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • ½ cup (120ml) vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup (240ml) boiling water
  • ½ cup (120ml) strong brewed coffee

To serve:

  • 4 cups ready-made chocolate frosting

How To Make Viral Matilda Cake

  1. Preheat your oven to 175°C. Grease and flour two 20cm round cake pans, or line with baking paper.
  2. In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, bicarb, and salt.
  3. Add eggs, milk, oil, and vanilla.
  4. Beat on medium speed for 2 minutes.
  5. Stir in the boiling water and coffee mixture.
  6. Pour batter evenly into the prepared pans.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the centre comes
    out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Place one cake layer on a serving plate.
  10. Spread a generous layer of frosting on top. Add the second cake layer and cover the entire cake with frosting.

Ingredients:

  • 200g dark or milk chocolate, chopped
  • 200g cream

How To Make Chocolate Ganache

  1. In a small saucepan, heat the cream over medium heat until it just starts to simmer — don’t let it boil.
  2. Pour the hot cream over the chopped chocolate.
  3. Let it sit for 2–3 minutes without stirring.
  4. This gives the chocolate time to soften.
  5. Using a spatula or whisk, gently stir the mixture from the center outward until the ganache is smooth, glossy, and fully combined.
