Vrikkadel Sliders

Serve up a South African classic with a twist!

Serves: 8–10 sliders

Ingredients:

For the Vrikkadels (South African-style meatballs):

  • 500g beef or lamb mince (or a mix)
  • 1 onion, finely grated
  • 2 slices white bread, soaked in milk and squeezed
  • 1 egg
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric (optional)
  • 1 tsp mild curry powder
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley or coriander, chopped
  • 1 tbsp Mrs Balls chutney (original or hot)
  • 2 tbsp flour (for shaping)
  • Oil for frying

For the Mrs Balls Chutney Glaze:

  • ½ cup Mrs Balls Chutney
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar or honey
  • 1 tbsp vinegar (balsamic or apple cider)
  • 1 tsp mustard (optional for a tangy bite)

For the Sliders:

  • 8–10 mini burger buns or slider rolls
  • Butter or mayo for toasting buns
  • Lettuce leaves or baby spinach
  • Tomato slices
  • Pickled onions or red onion rings (optional)
  • Cheese slices (cheddar or gouda works well)

 

How To Make Vrikkadel Sliders

  1. Start by making the vrikkadels.
  2. In a large mixing bowl, combine the mince, grated onion, soaked bread, egg, spices, herbs, salt, pepper, and Mrs Balls chutney.
  3. Mix well until the ingredients are fully incorporated.
  4. If the mixture feels too soft to shape, chill it in the fridge for about 15 minutes.
  5. Shape the mixture into small meatballs or slider-sized patties, flatten slightly, and dust with a bit of flour.
  6. Heat oil in a pan over medium heat and fry the vrikkadels until golden and cooked through, about 4–5 minutes per side.
  7. Set aside on a paper towel to drain.
  8. To make the glaze, combine the chutney, soy sauce, Worcestershire sauce, brown sugar or honey, vinegar, and mustard in a saucepan over medium heat.
  9. Stir well and simmer for 5–7 minutes until slightly thickened.
  10. Toss the cooked vrikkadels in the warm glaze or brush it over them generously for extra shine and flavour.
  11. To assemble the sliders, toast the buns in a pan with butter or mayo until golden and crisp.
  12. Add a lettuce leaf, followed by a slice of tomato.
  13. Place a chutney-glazed vrikkadel on top, then add cheese and pickled onions if using.
  14. Close the slider with the top bun and secure with a toothpick if needed.
  15. Serve immediately and enjoy!
