Waffles Topped with Rooibos Poached Fruit & Vanilla

Ingredients:

For the Rooibos Poached Fruit:

  • 2 cups water
  • 2 rooibos tea bags
  • ½ cup honey or brown sugar
  • 1 cinnamon stick
  • 2 cloves
  • ½ vanilla pod or 1 tsp vanilla essence
  • 2 pears, peeled, cored and sliced
  • 2 plums or nectarines, sliced (or use seasonal stone fruit)
  • Juice of ½ an orange

For the Waffles:

  • 1½ cups flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1¼ cups milk
  • 2 large eggs
  • ¼ cup melted butter
  • 1 tsp vanilla essence

For the Vanilla Cream:

  • 1 cup cream
  • 1–2 Tbsp icing sugar
  • 1 tsp vanilla essence

How To Make Waffles Topped with Rooibos Poached Fruit & Vanilla

  1. In a medium saucepan, bring water to a gentle boil.
  2. Add rooibos tea bags, cinnamon, cloves, vanilla, and sugar/honey.
  3. Simmer for 5 minutes, then remove tea bags.
  4. Add sliced fruit and orange juice.
  5. Simmer for 10–15 minutes or until fruit is soft but not mushy.
  6. Remove fruit with a slotted spoon and reduce the liquid until slightly syrupy (optional).
  7. Let the fruit and syrup cool slightly before serving.
  8. Preheat your waffle iron.
  9. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  10. In another bowl, mix milk, eggs, melted butter, and vanilla.
  11. Combine wet and dry ingredients, stirring just until smooth.
  12. Cook in waffle iron according to manufacturer’s instructions until golden and crisp.
  13. Whip cream with sugar and vanilla until soft peaks form.
  14. Chill until ready to use.
  15. Plate each waffle warm.
  16. Spoon over generous amounts of rooibos-poached fruit.
  17. Add a dollop (or swirl) of vanilla cream.
  18. Drizzle with the reduced rooibos syrup.
  19. Garnish with fresh mint leaves or a dusting of icing sugar if desired.
