Waffles Topped with Rooibos Poached Fruit & Vanilla

Ingredients:
For the Rooibos Poached Fruit:
- 2 cups water
- 2 rooibos tea bags
- ½ cup honey or brown sugar
- 1 cinnamon stick
- 2 cloves
- ½ vanilla pod or 1 tsp vanilla essence
- 2 pears, peeled, cored and sliced
- 2 plums or nectarines, sliced (or use seasonal stone fruit)
- Juice of ½ an orange
For the Waffles:
- 1½ cups flour
- 2 Tbsp sugar
- 1 Tbsp baking powder
- ½ tsp salt
- 1¼ cups milk
- 2 large eggs
- ¼ cup melted butter
- 1 tsp vanilla essence
For the Vanilla Cream:
- 1 cup cream
- 1–2 Tbsp icing sugar
- 1 tsp vanilla essence
How To Make Waffles Topped with Rooibos Poached Fruit & Vanilla
- In a medium saucepan, bring water to a gentle boil.
- Add rooibos tea bags, cinnamon, cloves, vanilla, and sugar/honey.
- Simmer for 5 minutes, then remove tea bags.
- Add sliced fruit and orange juice.
- Simmer for 10–15 minutes or until fruit is soft but not mushy.
- Remove fruit with a slotted spoon and reduce the liquid until slightly syrupy (optional).
- Let the fruit and syrup cool slightly before serving.
- Preheat your waffle iron.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, eggs, melted butter, and vanilla.
- Combine wet and dry ingredients, stirring just until smooth.
- Cook in waffle iron according to manufacturer’s instructions until golden and crisp.
- Whip cream with sugar and vanilla until soft peaks form.
- Chill until ready to use.
- Plate each waffle warm.
- Spoon over generous amounts of rooibos-poached fruit.
- Add a dollop (or swirl) of vanilla cream.
- Drizzle with the reduced rooibos syrup.
- Garnish with fresh mint leaves or a dusting of icing sugar if desired.
