Whole Turkey with Warm Butternut Salad and Feta and Tomato Salad

Ingredients:
- 1 butternut skin on cut in half and into finger thickness pieces
- Olive oil
- Salt
- Black pepper
- Labneh
- Smoked paprika
- Canola oil
- Wild rocket
- 1 lemon
- Nut and seed sprinkle
How To Make Warm Butternut Salad
- Place ¼ cup of canola oil in a pot, add 1 tablespoon of smoked paprika and bring to a sizzle, switch off and allow to cool, set aside.
- Place the butternut in the oven at 180 degrees, roast until caramelised and tender.
Allow to cool slightly - In a bowl add the rocket and dress with the juice of 1 lemon and a drizzle of olive oil.
- Season well.
- To assemble, place half the butternut on a platter and tuck bunches of wild rocket around, top with the remaining butternut.
- Add dollops of labneh and drizzle over the smoked paprika oil.
- Top with the nut and seed sprinkle and serve.
Ingredients:
- 2 tubs of feta and herb dip
- 5 roma tomatoes
- 1 pack of pickled onions
- Onion chilli crisp
- Olive oil
- Salt
- Pepper
How To Make Feta and Tomato Salad
- Place the feta and herb dip in the base of a plate and smear.
- Place the sliced tomatoes in a bowl, add olive oil and season well with salt and black pepper.
- Add the tomatoes on top of the feta and herb smear.
- Add the drained pickled onion and top with onion chilli crisp.
- Serve immediately.
