Recipe by: Clement Pedro
Ingredients:
For the battered pickles
Woolies sliced, sweet and sour gherkins
Woolies tempura flour
Sparkling water
Salt to taste
Oil for shallow frying
4 thick beef patties
1/2 cup smoky marinade
4 cheddar slices
4 cheese rolls, halved and toasted
Tabasco sriracha sauce
For the quick slaw
1/4 cabbage (red or white), finely shredded
1t sugar
1/4 cup mayonnaise
Freshly chopped coriander
1 spring onion finely sliced
Method:
For your pickles, remove your gherkin slices and pat dry. Prepare your tempura batter by following the package instructions using soda water. Heat your oil for shallow frying.
Coat your gherkins in a little tempura flour then dip into the batter and gently fry for 3 minutes turning over halfway. Place the crispy pickles on absorbent kitchen paper. Report the process with the remaining slices.
Heat a griddle pan over a high heat before adding your patties. Cook for 3 minutes turning 90 degrees half way to get a cross hatch char pattern on your burger. This isn’t for appearance but to get more char flavour into your burger.
Turn your burger over and baste with some of your marinade. Add the cheese and cook for another 2 minutes. While the patties are finishing off quickly prepare the slaw by combining the cabbage and sugar. Gently massage until the sugar is almost all dissolved then add the mayo, coriander and spring onion, mixing through.
To the base of your bun add some of the slaw followed by the burger patty, followed by the crispy pickles. Finish with some sriracha sauce and the top of the buns. Serve immediately and don’t forget the napkins!
