30- Minute Air Fryer Meals

 Delicious meals that are proudly South African and quick enough for weeknight dinners!

Ingredients:

  • 4 chicken breast fillets
  • 40 ml olive oil
  • 5 ml chicken spice
  • 1-2 garlic bread rolls, cut into small cubes
  • 1 yellow sweet pepper, seeded and cut into strips
  • 1 ripe avocado, sliced
  • 1 × 250 g punnet cherry tomatoes, halved
  • 1 small red onion, sliced
  • 125 ml thinly sliced biltong
  • 1 romaine lettuce, to serve

FOR THE DRESSING:

  • 90 ml buttermilk (or Greek yoghurt)
  • 90 ml creamy mayonnaise
  • 2 ml chicken spice
  • 5 ml Dijon mustard
  • 5 ml lemon juice

How To Make Chicken And Biltong Salad With Garlic-Bread Croutons

  1. Coat the chicken pieces with a little oil and season with the chicken spice.
  2. Set aside.
  3. Preheat the air fryer to 180 °C.
  4. Drizzle the garlic bread cubes with the olive oil.
  5. Shake to coat.
  6. Place in the air-fryer basket and cook for 5 minutes or until crispy, stirring halfway through the cooking time.
  7. Remove from the air fryer and set aside.
  8. Increase the air-fryer temperature to 200 °C.
  9. Put the chicken in the air-fryer basket.
  10. Cook for 5 minutes.
  11. Turn the chicken pieces over and add the yellow sweet pepper strips.
  12. Cook for a further 4-5 minutes until the chicken is cooked through.
  13. Remove from the air fryer and set aside to cool.
  14. Mix the dressing ingredients together in a jar and shake until combined.
  15. Slice the chicken.
  16. Place all the salad ingredients, except the croutons, onto a platter.
  17. Add the chicken slices and season with salt and freshly ground black pepper.
  18. Add the croutons and dressing just before serving.

Ingredients:

  • 2 cloves garlic, crushed
  • 5 ml grated fresh ginger
  • 15-20 ml Cape Malay curry spice blend (or use another mild curry spice)
  • 30 ml canola oil
  • 6-8 lamb rib chop
  • 1 onion, chopped
  • 1 red sweet pepper, seeded and diced
  • 1 × 410 g tin chopped tomatoes
  • 250 ml broccoli florets
  • 1 x 410 g tin samp and beans
  • Fresh coriander and poppadum’s, to serve

How To Make Lamb Chops With Curried Samp and Beans

  1. Mix half the garlic and ginger and 5 ml of curry spice together in a small bowl.
  2. Add 10 ml of the oil.
  3. Rub the mixture onto the lamb chops and set aside.
  4. Remove the tray from the air fryer.
  5. Preheat the air fryer to 200 °C.
  6. Add the remaining oil, onion and remaining garlic and ginger.
  7. Cook for 3 minutes.
  8. Stir in the remaining curry powder and red sweet pepper and cook for a further 2 minutes.
  9. Add the tomatoes and broccoli and cook for 10 minutes.
  10. Stir in the samp and beans and cook for 5 minutes.
  11. Stir the mixture, then place the chops on top.
  12. Cook for 3 minutes, then turn the chops over and cook for a further 5-7 minutes or until cooked through.
  13. Garnish with fresh coriander and serve with poppadums.

Ingredients:

  • 30 ml soft butter
  • 1 x 385 g tin pie apples
  • 10 ml ground cinnamon
  • 100 ml sugar
  • 3 vetkoek or amagwinya, cut into cubes
  • 160 g fresh berries
  • 2 large eggs
  • 125 ml cream
  • 125 ml milk
  • Whipped cream or custard, to serve

How To Make Apple and Cinnamon Vetkoek Bake

  1. Preheat the air fryer to 160 °C.
  2. Use the butter to grease an ovenproof container that will fit into the air-fryer basket.
  3. Place the apples in a bowl.
  4. Add the cinnamon and 75 ml of the sugar and mix| gently.
  5. Add the vetkoek pieces and toss gently.
  6. Spoon the mixture into the prepared container.
  7. Sprinkle over the berries.
  8. Mix the eggs, cream and milk together.
  9. Pour over the apple mixture and sprinkle with the remaining sugar.
  10. Bake the pudding in the air fryer for 20-25 minutes or until set.
  11. Remove from the air fryer and leave to stand for 5 minutes before serving with whipped cream or custard.
