Ingredients:
3 granny smith apples, peeled and sliced
1 tsp lemon juice
1 tsp vanilla essence
½ cup brown sugar + ¼ cup to sprinkle
1 tsp ground cinnamon
3 tbsp flour
½ cup golden raisins
¼ flaked almonds
1 sheet puff pastry
1 egg
½ cup milk
To serve:
Vanilla ice cream
Method:
Preheat the oven to 190C and prepare a baking sheet.
In a large bowl, combine the apples, lemon juice, vanilla, sugar, cinnamon, flour, raisins and almonds. Set aside.
Place the pastry onto the baking sheet and roll it out slightly using a rolling pin to make it even. Spread the apple mixture evenly down the centre of the pastry lengthwise. Cut the sides of the pastry into strips and fold the strips over each other to over the filling. Sealing the lightly with water. Whisk the egg and milk together. Lightly brush the top of the pastry with the egg wash and sprinkle the remaining sugar over.
Bake for 35-40 minutes until golden brown.
Serve with vanilla ice cream.
Chefs Tip:
Be sure to fill and assemble your apple strudel on the baking sheet as it may become difficult to transfer it from your working surface once filled
Apple strudel is best served warm, 10 minutes after cooling time with ice cream or with a glass of milk.
