Apricot Lemon Snoek with Roosterkoek

Nothing like snoek on the braai for Heritage month! Get the perfect smoky flavour with the Weber Original Kettle.

Ingredients:

  • 500g store bought bread dough
  • 1 butterflied snoek fish of your choice
  • Spring onion and chives flavored cream cheese, to serve
  • Lemon wedges, for serving
    Marinade:
  • ¼ Cup smooth apricot jam, melted
  • 2-3 cloves garlic, minced
  • Zest and juice of one lemon
  • 1/3 Cup unsalted butter, melted
  • Handful dill, finely chopped
  • Handful parsley, finely chopped
  • Salt and pepper, to taste

How To Make 

  1. Prepare the marinade by combining all the ingredients until smooth.
  2. Prepare your Weber and get the coals ready to a medium-high heat.
  3. Shape the bread dough into 6-8 portions by rolling them into balls on a floured surface and press them flat.
  4. Then add the bread buns to the grid and allow them to cook on each side for 7-8 minutes until they are cooked through.
  5. The bread should sound hollow when tapped.
  6. To prepare the snoek, place the snoek on the grid skin side down.
  7. Brush the marinade on the fish, close the Weber and allow to cook for 8-10 minutes, making sure to keep basting it.
  8. To serve, cut the roosterkoek in half and spread some cream cheese onto each one and break off the fish and serve on the rolls or on the side with the remaining marinade.
