B-well Breakfast Egg and Broccoli Bars
An eggcellent way to hide the broccoli from the pickiest eaters, this delicious breakfast will satisfy you and your family.

1 cup B-well Original Tangy Mayonnaise
½ a medium onion, finely chopped
1 garlic clove, finely chopped
1 head of broccoli, stem removed and finely chopped
2 medium carrots, peeled and grated
B-well Cooking Olive Oil
8 large eggs
¼ cup oat flour
½ cup mozzarella cheese, grated
½ cup mature cheddar cheese, grated
1 tbsp herb seasoning
Handful fresh chives, finely chopped
Preheat the oven to 180C and line a rectangle baking dish with parchment paper.
Heat a large skillet and drizzle a generous amount of B-well olive oil into the skillet.
Add the onion and garlic and sauté until soft.
Add in the broccoli and grated carrots and sauté for 2-3 minutes until they are tender and crisp. Season with salt and pepper. Remove form the heat and set aside
In a large bowl, crack all the eggs and add in the oat flour, half the cheeses and seasoning. Whisk until well combined.
Fold in the sautéed veggies.
Pour this mixture into the prepared dish and top with remaining cheese. Bake for 15-20 minutes or until an inserted knife comes out clean.
Remove from the oven and allow to cool slightly.
In a small bowl combine the mayonnaise and chives.
Slice the egg bake into 8 slices and serve with the mayo as a dip.
Chefs Tip: This recipe great vegetable filled meal, but you could also add bacon or smoked salmon for additional protein.
