B-well Crispy Chicken Salad with Chillinaise

Loaded with B-Well’s addictive chilli mayonnaise!

Ingredients:

For the chicken:
1 cup buttermilk
½ cup B-well chillinaise
400g chicken tenders
½ cup all-purpose flour
2 tsp garlic powder
2 tsp smoked paprika
2 eggs
1 ½ cup panko breadcrumbs
¼ cup hard grated cheese
B-well canola cooking spray

For chilli mayo dressing:
1 cup B-well chillinaise
¼ cup bbq sauce
1 tbsp honey

For the salad:
1 cup cherry tomatoes
½ cup sliced red onions
2 avocados, sliced
Lettuce

Method:

Prepare and air fryer.
In a bowl, marinate the chicken in the buttermilk, chillinaise and season with salt and pepper. Marinate for 30 minutes or overnight. Prepare 3 separate bowls. In one bowl, add the flour, garlic powder and smoked paprika and mix through. In another bowl, whisk the eggs and in the last bowl, place the panko crumbs and cheese. Crumb your chicken tenders by removing a tender from the marinade and allowing the excess marinade to drip off, place the tender in the flour, followed by the egg and lastly the breadcrumb mixture. Making sure each tender is completely covered in the crumb. Spray the tenders with the canola oil and place in the air fryer basket. Cook for 10 minutes or until the tenders are golden brown and cooked through. For the dressing, combine all the ingredients in a bowl. To assemble, add the lettuce to a large bowl, topped with the tomatoes, onions, avocados and the chicken on top. Dollop on the mayo and serve immediately.

Chefs Tip: You can toss the chicken and marinade together in a zip-lock bag and freeze it for when you’re craving this wholesome salad. Pull it out of the freezer and refrigerate overnight, the chicken will marinate as it defrosts.
