B-well Pizookie

This cookie is as big as a pizza and bakes in a cast iron skillet in your oven.

Serves: 8-12

1 cup B-well Olive Oil
1 tbsp vanilla essence
3/4 cup granulated sugar
½ cup white sugar
1 large egg
2 cups flour
½ tsp bicarb
Pinch of salt
1 cup dark chocolate chips
1 cup milk chocolate chips
B-well Canola Baking Spray

Serve with:
Vanilla ice cream


Preheat the oven to 180C.
In a large bowl combine the olive oil, vanilla, sugars and mix until smooth. Add the egg and mix until fully combined and smooth. Add the flour, bicarb and pinch of salt and combine until fully incorporated. Fold in the chocolate chips.
Spray an oven-proof skillet with baking spray and spread the batter into the skillet.
Bake for 30-35 minutes or until a skewer is inserted and comes out clean. Let it cool slightly before serving with ice cream.

Chefs Tip:  If you don’t have an oven proof skillet, you can bake this recipe in a round cake pan or in a pie pan as well.
