
Clover Bliss Pancake Tacos
Taco-bout a hands-on breakfast!

Ingredients:
For the pancakes
2 cups flour
2 tsp baking powder
Pinch of salt
2 tbsp sugar
1 cup milk
1 tsp vanilla essence
2 eggs
For the filling
2 pears, sliced or cubed
2 tbsp butter
¼ cup brown sugar
For the honey yoghurt
1 cup Bliss Double Cream yoghurt, plain flavour
2 tbsp honey
½ cup toasted walnuts, chopped
Method:
To make the pancake tacos, sift the flour, baking powder and salt into a bowl. Stir in the sugar. Make a well in the centre and add in the eggs, milk and vanilla. Whisk to incorporate. Add more milk if the batter is too thick.
Heat a thin layer of oil in a large frying pan and pour in a ladle full of the batter, enough to make a taco shape, spreading it out on the pan. Cook for 1-2 minutes on each side and set the pancakes aside.
To make the caramelized pears, melt butter in a saucepan and stir in the sugar. Allow the sugar to melt then add in the pears. Cook for a few minutes until the pears are golden in colour and syrupy.
Mix together the Bliss yoghurt and honey. Assemble the tacos by placing the yoghurt onto a taco pancake, top with caramelized pears. Drizzle over more yoghurt or honey and top with toasted walnuts.
Chefs Tip: You can use any of the Clover Bliss yoghurt flavours for this recipe and you can use any fruits that are in season for the filling
