B-well Spiced Apple Zucchini Loaf

A beautifully spiced loaf, low in sugar for a healthier tea time snack!

B-well Canola Cooking Spray
1 cup zucchini, grated
1 cup banana, mashed
2 eggs
½ cup honey
1 tsp vanilla essence
¼ butter, melted
1 ¾ cup flour
1 tsp baking soda
1 tsp cinnamon
½ tsp allspice
½ tsp ginger
¼ tsp nutmeg
Pinch of salt
1 medium apple, cored and cubed
1/3 cup pecan, roughly chopped

250g cream cheese, softened
¾ icing sugar
1 tsp vanilla essence
¼ tsp cinnamon
2 tbsp of milk


Preheat the oven to 180C and spray a loaf tin with the B-well Canola Cooking Spray

Place the zucchini in a clean dish towel and squeeze out all the moisture. This is very important. In a bowl combine the shredded zucchini, banana, eggs, honey, vanilla and melted butter and mix well.
Add the flour, baking soda, cinnamon, all spice, ginger, nutmeg and a pinch of salt. Mix until well combined.
Fold in pecans and chopped apples. Pour the batter into the prepared pan. Bake for 45 minutes or until a skewer comes out clean. Place on cooling rack and allow to cool completely.
In the meantime, make the cinnamon cream cheese. Beat the cream cheese, icing sugar, vanilla essence, cinnamon and milk together until smooth.

Top the loaf with the cream cheese frosting and toasted pecans and enjoy!

Chefs Tip: If you’re allergic to nuts, you can completely omit the nuts.
