Ingredients:
2 cups cake flour 1t baking powder 1t cinnamon 1/4t nutmeg 1/2t ground ginger 1/2t salt 1 1/4 cup butternut, steamed and blended smooth 1 1/2 cup milk 1/4 golden syrup 1/2 cup butter, melted 2 eggs, separated
Top with Tin roof ice cream Chuckles malted puffs
Method:
In a large mixing bowl combine your flour, baking powder, cinnamon, nutmeg, ginger and salt. In a separate bowl mix together the butternut, milk, syrup, butter and egg yolks. Pour the wet ingredients into the dry ingredients, mixing gently to combine. Beat the egg whites until stiff peaks form, then fold into the butternut mixture. Coat a waffle iron with non-stick spray before adding about 1/2 a cup of the mixture to the waffle maker. Cook until lightly golden but still fluffy inside. Add a generous scoop of ice cream to your waffle and finish with crushed chuckles.
