How To Make Babalas Nachos
- Prep the Salsa: In a small bowl, mix the diced tomato, green pepper, and onion. This “Monday leftovers” mix is best prepared first so the flavors can meld while you prep the rest.
- Preheat: Set your oven to 200°C.
- Layer the Base: Spread half of the corn chips onto a large baking tray or oven-proof dish.
- Add the Melt: Top the first layer with half of the shredded Gouda, half of the cheddar, half of the crispy bacon, and a sprinkle of chili flakes.
- Double Up: Add the remaining chips and cover with the rest of the Gouda, cheddar, bacon, and chili flakes.
- The Bake: Place the tray in the oven for 5–8 minutes, or until the cheese is completely melted and bubbly.
- The Fresh Toppers: Remove from the oven and immediately scatter the fresh tomato, pepper, and onion salsa over the hot cheese.
- Final Garnish: Finish by crumbling the feta over the top and adding generous dollops of guacamole.
