Babalas Nachos

Ingredients:

  • 1 large bag (approx. 150g-200g): Nacho-flavored corn chips
  • 150g Gouda cheese, shredded
  • 150g Sharp cheddar cheese, shredded
  • 200g Diced bacon, fried until crispy
  • 1 tsp Dried chili flakes

To serve:

  • Leftover salsa, guacamole and feta cheese

How To Make Babalas Nachos

  1. Prep the Salsa: In a small bowl, mix the diced tomato, green pepper, and onion. This “Monday leftovers” mix is best prepared first so the flavors can meld while you prep the rest.
  2. Preheat: Set your oven to 200°C.
  3. Layer the Base: Spread half of the corn chips onto a large baking tray or oven-proof dish.
  4. Add the Melt: Top the first layer with half of the shredded Gouda, half of the cheddar, half of the crispy bacon, and a sprinkle of chili flakes.
  5. Double Up: Add the remaining chips and cover with the rest of the Gouda, cheddar, bacon, and chili flakes.
  6. The Bake: Place the tray in the oven for 5–8 minutes, or until the cheese is completely melted and bubbly.
  7. The Fresh Toppers: Remove from the oven and immediately scatter the fresh tomato, pepper, and onion salsa over the hot cheese.
  8. Final Garnish: Finish by crumbling the feta over the top and adding generous dollops of guacamole.
