Baked Hot Chocolate Dougnuts
There is nothing not love about these decadent baked hot chocolate doughnuts.

Ingredients:
2 eggs, room temperature
½ sugar
½ cup milk
½ buttermilk
1 tsp vanilla paste
1 ½ cup whole wheat flour
½ cocoa powder
2 tsp instant coffee powder
1 ½ tsp baking powder
1 tsp baking powder
1/2 tsp salt
1/3 cup dark chocolate chips
2 tbsp Clover classic spread, melted
For the glaze:
½ cup dark chocolate chips
1/3 cup cream
1 tsp coffee
1 tsp vanilla essence
Chocolate shavings, for garnish
Method:
Preheat the oven to 180°C and prepare a 6-cup doughnut pan with melted classic spread.
In a large mixing bowl, whisk together the eggs, maple syrup, milk and vanilla until combined. Add the flour, cocoa powder, coffee, baking powder, baking soda and salt until just combined. Sit in the chocolate drops and classic spread until incorporated. Do not over mix. Pour the batter into the molds, filling them just over ½ way. Bake for 12-15 minutes. Allow to cool. Make glaze; heat the cream in a saucepan, add the coffee and bring to a gentle simmer. Add the chocolate chips to a bowl, pour the hot cream over the chocolate chips and whisk until smooth. Add the vanilla essence and stir. Dip or drizzle the doughnuts in the glaze, top with chocolate shavings and enjoy! Serve with a warm mug of hot chocolate.
Chefs Tip:
The use of whole wheat flour helps create a really nice texture and crumb that is similar to a real fried doughnut, plus it is a healthier alternative.
If you don’t have a doughnut pan, you can use a regular muffin pan but ensure that the pan is heavily greased before adding your batter and baking.
You can add any of your favourite doughnut garnishes, such as flaked almonds, honeycomb or colorful sprinkles.
Add marshmallows to your cup of hot chocolate to make it extra decadent!
