Baked Lemon-Garlic Fish with Sweet Potatoes

Ingredients:

  • 2 white fish fillets (e.g., cod, tilapia, or hake)
  • 1 large sweet potato, cubed
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 cup steamed broccoli (for Vitamin C to aid iron absorption)

Method:

1. Preheat your oven to 200°C (400°F).

2. Toss sweet potato cubes with half the olive oil and a pinch of salt. Spread on a baking sheet and roast for 15 minutes.

3. Move the potatoes to the side and place the fish fillets on the same sheet.

4. Drizzle the fish with the remaining oil, lemon juice, and oregano.

5. Bake everything for another 12–15 minutes until the fish flakes easily with a fork and potatoes are tender.

6. Serve with steamed broccoli to ensure a well-rounded micronutrient profile.
