It’s hearty, flavourful, and made with simple pantry staples, but what really makes it shine is how nourishing it is.
Ingredients:
1 cup yellow or red lentils (washed)
2 cups fresh spinach, chopped
1 onion, finely diced
2 tomatoes, chopped
2 cloves garlic, minced
1 tsp turmeric (anti-inflammatory properties)
1 tbsp olive oil or vegetable oil
4 cups water or low-sodium vegetable broth
Method:
1. Heat oil in a large pot and sauté onions and garlic until translucent.
2. Add tomatoes and turmeric, cooking until the tomatoes soften.
3. Stir in the lentils and water/broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes until lentils are soft.
4. Stir in the chopped spinach during the last 3 minutes of cooking until wilted.
5. Serve warm, ideally with a side of brown rice or whole-wheat bread to provide complex carbohydrates for sustained energy.
