
Beef, ClemenGold® and Feta Salad
ClemenGold® adds a refreshing twist to this salad – perfect for springtime!

Serves: 2-4
Time: 40 minutes
Ingredients:
- 2x Sirloin steaks
- Salt
- Pepper
- 180g Italian salad greens
- 1 Mediterranean cucumber, ribboned
- 4 ClemenGold mandarins
- 90g Pickled red onion
- 1 avocado, peeled, pitted and cubed
For the dressing: - ½ cup extra-virgin olive oil
- 2 tbsp siracha
- 2 tbsp fish sauce
- 2 tbsp sherry vinegar
- Juice and zest of 1 ClemenGold
- Salt
How To Make:
- Heat the oil in grill pan.
- Season the steaks with salt and pepper and cook on the pan for 4-6 minutes on each side, until evenly browned.
- Set aside an allow to rest.
- In the meantime, combine all the ingredients for the dressing in a bowl and whisk to combine. Season to taste.
- Assemble the salad ingredients on a platter starting with the greens.
- Cut the skin off the mandarins, slice into rounds and place on the salad.
- Cut the steaks into slices and arrange on the salad followed by the avocado, red onion and feta.
- Drizzle over the salad dressing and enjoy.
