Beef Koftas with Tzatziki & Pita Breads

Ingredients:
500g lean beef mince
3 cloves garlic, minced
1 cup fresh parsley, chopped
1 tbsp dried thyme
½ onion, chopped
2 tsp ground all spice
1 cup Authentikos
½ large cucumber, grated and liquid squeezed out
¼ fresh mint, chopped
¼ olive oil
4 pita breads, toasted
1 pickled red onion
Fresh greens
8 bamboo skewers, soaked
Method:
Heat a grill pan and drizzle olive oil. In a bowl, combine the mince, 2 garlic cloves, parsley, thyme, onion and all spice. Season with salt and pepper and mix through. Shape into ovals and gently spike onto the soaked skewers. Grill the koftas until cooked through. To make the tzatziki, combine the yogurt, cucumber, remaining garlic clove, fresh mint, olive oil and season with salt and black pepper and mix well. Serve the koftas with the tzatziki, pita breads, fresh greens and pickled onions.

You can serve this recipe with roasted potato wedges, a Greek salad or even hummus. Creating your favourite table of Mediterranean abundance!
