School is back, so your kid needs THEE energy booster, packed with peanut power once again.
Serves: 2-4

Ingredients:
1 Cauliflower head, cut into florets
1 Cup Panko Bread Crumbs
2 Eggs, beaten
Salt and Pepper, to taste
Oil for deep frying
Dipping sauce:
1/3 Cup Crosse & Blackwell Mayonnaise
2 Tbsp Black Cat Smooth Peanut Butter – No Sugar No Salt
2 Tbsp Sriracha Sauce
1 Tbsp Lemon Juice
Handful fresh Coriander, finely chopped
Method:
Cook the cauliflower florets in some salted boiling water for 3-4 minutes and then set aside.
Season the egg with salt and pepper and dip the florets into the beaten eggs and then into the panko bread crumbs. Repeat the process to create a double coat of bread crumbs.
Bring some oil for deep frying to a medium-high heat, then fry the cauliflower in batches until golden brown in colour.
To make the dipping sauce, combine all the ingredients into a mixing bowl and using a whisk mix until smooth.
Serve the cauliflower bites with the dipping sauce.
Chefs Tip: If you don’t have panko bread crumbs you can use normal bread crumbs instead.
