Black Forest Christmas Pudding

A timeless classic to create merry memories with Golden Cloud and Beacon Treats!

Serves: 6-8
Time: 1 hour

Ingredients:

  • 2 cups Dried fruit
  • ½ cup Dates, pitted
  • 2 tsp Brandy essence
  • ¼ cup Water
  • ½ cup orange juice
  • 150g Butter, softened
  • ½ cup Brown sugar
  • 2 Large eggs
  • 1 ½ cups Golden Cloud Self-Rising Flour
  • 1 tsp Bicarbonate of soda
  • 2 tsp Mixed spice
  • 1 tsp orange zest
  • 3 x 80g Beacon Midnight Velvet Chocolate
  • ¼ cup Cream

How To Make 

  1. Preheat the oven to 180C and prepare a metal pudding bowl with parchment paper.
  2. Place the mixed fruit, dates, brandy essence, water and orange juice into a saucepan over medium heat, stir and allow to simmer for a few minutes until the fruit has softened.
  3. Remove from the heat and allow to cool completely
  4. Beat the butter and sugar together until pale and fluffy, add in egg – one at a time.
  5. Sift in flour, bicarbonate of soda and mixed spice, beat with an electric whisk until well combined.
  6. Add the fruit mixture and orange zest, stir to combine.
  7. Roughly chop one slab of chocolate and fold into the batter.
  8. Pour the batter into the prepare pudding bowl. Top with a circle of parchment paper, cover with foil and tie with kitchen sting to secure
  9. Place the bowl in a large pot over low heat and fill with boiling water until it reaches ¾ up the sides of the bowl.
  10. Cover and cook for 2 hours, adding more boiling water if needed.
  11. Remove the bowl from saucepan and allow to stand for 15 minutes.
  12. In the meantime, melt the remaining chocolate and cream in the microwave. Stirring every 30 seconds, until smooth.
  13. Carefully turn the pudding out onto a plate. Top with the chocolate ganache and fresh cherries
