Blender Flapjacks with Yoghurt and Fruit
Whip these up in a flash by throwing all your ingredients in a blender! Serve with Clover Double Cream Plain Yoghurt for the perfect snack.

Ingredients:
- Flapjacks:
- 1 Cup Oats
- 2 Tbsp Flour
- 1/3 Cup Milk
- 1 Large egg
- ½ tsp baking powder
- Pinch of salt
- Candied nuts:
- ¼ Cup Walnuts
- ¼ Cup Almonds
- ½ Sugar
- Flaked salt
- Clover Double Cream yoghurt, to serve
- Fruit of your choice, to serve
How To Make Blender Flapjacks
- To make the candied nuts, add the sugar to a non-stick pan and bring to a medium-high heat.
- Allow the sugar to cook until amber in colour.
- Add the nuts and coat with the sugar and then pour and spread out the nuts on a lined baking sheet, sprinkle with some flaked salt.
- Allow the nuts to cool completely and break up until ready to use.
- To prepare the flapjack mixture, add all the ingredients into a blender and blend until smooth.
- In a medium heated non-stick pan, pour about 3 tablespoons of batter to create a flapjack.
- Allow to cook until the batter starts to bubble and turns a golden colour.
- Flip and cook the other side until the flapjack has cooked through.
- Repeat until all the batter has been used up.
- Serve the flapjacks with chopped fruit, Clover double cream yoghurt and chopped candied nuts.
Chefs Tip: The batter freezes well, pour the batter into an ice cube tray to prepare individual portions.
