Breakfast Waffles

TasteMaster Junior contestant, 14-year-old Omphile Mohala shares his favourite breakfast waffle recipe!

Ingredients:

  • For the waffles:
  • 3 cups flour
  • 3 eggs
  • 2 cups milk
  • ¼ cup oil
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tsp royal baking powder
  • For the raspberry compote:
  • Fresh berries
  • White sugar
  • Cornstarch
  • Lemon juice
  • To serve:
  • Maple syrup
  • Chocolate chips
  • Icing sugar
  • Fresh berries
  • Mint

How To Make Breakfast Waffles

  1. For the waffles: In a large bowl, mix flour, salt and baking powder.
  2. In a separate bowl whisk together eggs, vanilla extract and oil.
  3. Add the wet ingredients into the dry ingredients and mix until well combined.
  4. Heat your waffle iron and grease it with cooking spray, ladle the batter into the preheated waffle iron, cook until the waffles are golden and crispy.
  5. Serve immediately with a generous amount of berry compote and garnish with toppings of your choice.
