Budget Friendly Fried Rice

This dish is versatile, so feel free to add any protein or vegetables of your choice.

Ingredients:

  • 2 cups leftover rice (preferably cold)
  • 1 Tbsp oil
  • 1 onion, chopped
  • 2 tsp crushed garlic
  • 1 cup frozen mixed vegetables
  • 2 eggs, beaten
  • 2-3 Tbsp soy sauce
  • Salt and pepper to taste
  • Spring onions, to serve
  • Protein of choice, optional

How To Make Budget Friendly Fried Rice

  1. Heat oil in a large non-stick pan, add in onions and garlic, allow this to cook until the onions are translucent.
  2. Add mixed vegetables to the pan and cook for 3 minutes until heated through and tender.
  3. Push the vegetables to one side of the pan add in eggs, scramble the eggs until they are cooked through and fluffy.
  4. Add in rice and mix until well combined.
  5. Season to taste with salt & pepper and lastly pour in soy sauce.
