Butter Chicken Baguette Cups

Ingredients:
- 2 Tbsp olive oil
- 1 onion, chopped
- 2 chicken breasts, cubed
- 1 Tbsp garlic & ginger
- 1/2 cup plain yoghurt
- 1 Tbsp tomato paste
- 1 Tbsp butter chicken spice
- ½ tsp ground cumin
- ½ tsp ground coriander
- salt & pepper
- 2 large baguettes
- 4 Tbsp Clover Butter Spread
- 1 ½ cups cheddar cheese
- To serve: coriander
How To Make Butter Chicken Baguette Cups
- Preheat oven to 180°C, line a baking tray with baking paper and set aside.
- Heat olive oil in a non-stick pan, then add chicken, garlic, ginger, plain yoghurt, tomato paste, spices and seasoning into a large bowl and mix until well combined, add onions into the warm oil and cook until translucent.
- Add the marinated chicken to the pan and cook for 10 minutes, finish with fresh coriander and season to taste.
- Cut the baguettes into 4 equal pieces, then use a spoon or your fingers to press the bread towards the sides, spread a generous amount of Clover Butter Spread on the inside of each cup then fill each baguette cup with butter chicken, top with cheese and bake for 6 minutes, until cheese has melted, and bread is lightly toasted.
- Serve immediately and garnish with fresh coriander enjoy!
