Butter Chicken Baguette Cups

  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 2 chicken breasts, cubed
  • 1 Tbsp garlic & ginger
  • 1/2 cup plain yoghurt
  • 1 Tbsp tomato paste
  • 1 Tbsp butter chicken spice
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • salt & pepper
  • 2 large baguettes
  • 4 Tbsp Clover Butter Spread
  • 1 ½ cups cheddar cheese
  • To serve: coriander

How To Make Butter Chicken Baguette Cups

  1. Preheat oven to 180°C, line a baking tray with baking paper and set aside.
  2. Heat olive oil in a non-stick pan, then add chicken, garlic, ginger, plain yoghurt, tomato paste, spices and seasoning into a large bowl and mix until well combined, add onions into the warm oil and cook until translucent.
  3. Add the marinated chicken to the pan and cook for 10 minutes, finish with fresh coriander and season to taste.
  4. Cut the baguettes into 4 equal pieces, then use a spoon or your fingers to press the bread towards the sides, spread a generous amount of Clover Butter Spread on the inside of each cup then fill each baguette cup with butter chicken, top with cheese and bake for 6 minutes, until cheese has melted, and bread is lightly toasted.
  5. Serve immediately and garnish with fresh coriander enjoy!
