Larnelle’s Butternut Soup Larnelle Lewies’ winter favourite, butternut soup.Recipe by: Larnelle LewiesServes: 2- 4Time: 50 minutes Ingredients:2 small butternuts, peeled and cubed½ onion, finely chopped3 tbsp butter½ tsp cinnamon1 tbsp sugar3 cups chicken stock1 cup milkSaltPepperFor garnish:Fresh rosemaryGround cinnamon How To Make Larnelle’s Butternut SoupHeat a large pot on medium heat, add the butter and melt.Add the onions and saute for 5 minutes. Season lightly with saltAdd the butternut, cinnamon and sugar and saute for 10 minutes, stirring as needed.Add the chicken stock and bring to a boil. Lower the heat and allow to simmer for 30 minutes with a lid on.Add the milk and stir to combine.Transfer the mixture to a food processor or blender and blend in batches until smooth.Return the soup to the pot and heat slightly.Serve and enjoy!
