Larnelle’s Butternut Soup

Larnelle Lewies’ winter favourite, butternut soup.

  • 2 small butternuts, peeled and cubed
  • ½ onion, finely chopped
  • 3 tbsp butter
  • ½ tsp cinnamon
  • 1 tbsp sugar
  • 3 cups chicken stock
  • 1 cup milk
  • Salt
  • Pepper

For garnish:

  • Fresh rosemary
  • Ground cinnamon

How To Make Larnelle’s Butternut Soup

  1. Heat a large pot on medium heat, add the butter and melt.
  2. Add the onions and saute for 5 minutes. Season lightly with salt
  3. Add the butternut, cinnamon and sugar and saute for 10 minutes, stirring as needed.
  4. Add the chicken stock and bring to a boil. Lower the heat and allow to simmer for 30 minutes with a lid on.
  5. Add the milk and stir to combine.
  6. Transfer the mixture to a food processor or blender and blend in batches until smooth.
  7. Return the soup to the pot and heat slightly.
  8. Serve and enjoy!
