Bwell Garlic Fried Mushroom with Chipotle Dip

With a perfectly crisp coating and deliciously juicy flavour on the inside these crispy garlic fried mushrooms are the ultimate vegetarian comfort snack! An extremely versatile dish that can be served as weeknight dinner or even a snack when hosting.

For the mushrooms:
1 kg oyster Mushrooms
2 cloves garlic, minced
2 tsp garlic powder
3 tbsp soy sauce
1 tsp cayenne
1 tsp white pepper

For the batter:
½ cup corn flour
1 cup rice flour
1 egg
1/3 cup soda water, cold
2 tsp garlic powder
2 tsp smoked paprika
2 tsp cayenne
Salt and pepper

B-well Pure Canola oil, for frying

For dipping sauce:
1 cup mayo
½ cup chipotle sauce
1 tbsp lemon juice
Salt and pepper


Tear the mushrooms into bite size pieces. Place the mushrooms in a large bowl and all the garlic cloves, garlic powder, soy sauce, cayenne and white pepper. Toss to coat and marinate for 10 minutes. Prepare the batter by combining all the ingredients for the batter and whisking until smooth. Add in the mushrooms and allow to rest for 5-10 minutes. In a pan heat the oil, fry the mushrooms until crispy and golden. Make the dipping sauce; combine all the ingredients and season to taste. Serve immediately.

Chefs Tip:

  • If oyster mushrooms are not readily available to you, you may substitute them for exotic mushrooms or any mushrooms of your choice
  • The cold soda water is the secret to making the batter light, yet super crispy!
