
Clover Bliss Red Lentil Curry
When you hear the word lentils, you probably don’t think of decadence. But with the addition of Clover Bliss Double Cream yoghurt, we’re setting out to show how its possible to have an indulgent red lentil curry, perfect for those midweek meals that are utterly delectable

Ingredients:
1 tbsp oil
1 onion, chopped
1 tbsp garlic and ginger paste
1 tsp ground turmeric
1-2 chilli, chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp chili powder
2 tsp curry powder
1 tsp garam masala
Salt to taste
1 cup red lentils
2 cups stock
1 tin chopped tomatoes
1 cup Clover Bliss Double cream yoghurt, plain flavor
½ cup fresh coriander, roughly chopped
Rice or naan for serving
Method:
Rinse the lentils in cold water until the water runs clear.
Heat a large, saucepan over medium-high heat and add the oil. add the onion and cook for a minute then add in the garlic and ginger paste, turmeric chili. Cook for 2 minutes, stirring frequently.
Add in the spices and cook until fragrant. Pour in the vegetable stock and add in the lentils and the chopped tomatoes. Mix well, reduce the heat to low and cover the pan with a lid. Simmer for 20 to 25 minutes, or until the lentils are cooked through and have mostly softened. Remove the lid and stir in the Bliss Double Cream yoghurt and season with salt. Continue cooking on low heat, uncovered for 5 to 8 minutes, until the curry has thickened and is creamy.
Finally, stir in the coriander and turn off the heat and serve warm.
