Heat oil in a large skillet, add in onions and cook until the onions are soft, then add in sugar and allow the onions to caramelise before adding in the vinegar.
Stir well then add the thyme and rosemary and allow it to cook for 15 minutes until the mixture has thickened and has a chutney like consistency.
Season with salt & pepper and allow it to slightly cool before serving.
