- Preheat Oven: Ensure your oven is fully preheated to 200°C (400°F) so the potatoes begin caramelizing immediately.
- Prepare Sweet Potatoes: Wash the sweet potatoes and cut them in half lengthwise. Try to use potatoes of a similar size to ensure they cook evenly. You can leave the skins on for added texture.
- Season: Place the sweet potato halves on a baking sheet in a single layer. Lightly coat them with olive oil spray. Rub a small amount of maple syrup over the cut side of each potato.
- Arrange for Roasting: Place each sweet potato half cut-side down on the baking sheet. This direct contact with the pan is the secret to achieving those deep golden, caramelized edges.
- Bake: Roast for 40 minutes. Avoid moving or flipping them during this time so the sugars can properly caramelize against the heat of the pan.
