
Cardamom & Rose Mousse Topped with Pistachios

Preparation time: 10 – 15 minutes, plus 1 hour to set
Ingredients:
- 1 cup fresh cream
- ¼ cup condensed milk
- ½ tsp ground cardamom
- 2 Tbsp rose syrup
- A few drops of pink food coloring (optional)
- 1 tsp gelatin powder
- 2 Tbsp cold water

- Pistachios, chopped
How To Make Cardamom & Rose Mousse Topped with Pistachios
- In a small bowl, mix the gelatin powder with water and stir until fully dissolved.
- Let it sit for a minute.
- In a mixing bowl, whip the cream until soft peaks form.
- Gently fold in the condensed milk, ground cardamom, rose syrup, and food colouring (if using).
- Pour the dissolved gelatin into the mousse mixture while whisking continuously to avoid lumps.
- Whip for another 30 seconds to ensure everything is well combined.
- Spoon the mousse into serving glasses or bowls and refrigerate for at least 1 hour to set.
- Before serving, sprinkle with crushed pistachios.
Chefs Tip: Use Chilled Ingredients – For the best texture, ensure your cream and mixing bowl are well chilled before whipping to achieve a light and airy mousse. If you prefer a sweeter mousse, add a little extra sugar or honey. If you like it less sweet, reduce the amount slightly.
