  • 1 tsp gelatin powder
  • 2 Tbsp cold water

  1. In a small bowl, mix the gelatin powder with water and stir until fully dissolved.
  2. Let it sit for a minute.
  3. In a mixing bowl, whip the cream until soft peaks form.
  4. Gently fold in the condensed milk, ground cardamom, rose syrup, and food colouring (if using).
  5. Pour the dissolved gelatin into the mousse mixture while whisking continuously to avoid lumps.
  6. Whip for another 30 seconds to ensure everything is well combined.
  7. Spoon the mousse into serving glasses or bowls and refrigerate for at least 1 hour to set.
  8. Before serving, sprinkle with crushed pistachios.
