Spicy Chickpea & Avo Toast

Spice up your avo toast for a delicious breakfast or lunch option!

Ingredients:

  • For the Spicy Chickpeas:
  • 1 tin chickpeas, drained & rinsed
  • 1 Tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp chili flakes
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • 1 Tbsp lemon juice
  • For the Avocado Smash:
  • 1 large ripe avocado
  • ½ tsp lemon or lime juice
  • Salt & pepper, to taste
  • Handful chopped coriander
  • To serve:
  • 2 slices sourdough, toasted
  • Coriander
  • Chili flakes, optional

How To Make Spicy Chickpea & Avo Toast

  1. Heat olive oil in a pan over medium heat.
  2. Add chickpeas, smoked paprika, cumin, chili flakes, garlic powder, salt, and black pepper.
  3. Stir and cook for 4–5 minutes, until crispy and golden.
  4. Squeeze in lemon juice and remove from heat.
  5. In a bowl, mash the avocado with a fork.
  6. Mix in lemon juice, salt, black pepper, and chopped coriander.
  7. Spread the avocado mash evenly on toasted bread slices.
  8. Top with the warm spicy chickpeas.
  9. Garnish with extra chili flakes and coriander.
