
Spicy Chickpea & Avo Toast
Spice up your avo toast for a delicious breakfast or lunch option!

Ingredients:
- For the Spicy Chickpeas:
- 1 tin chickpeas, drained & rinsed
- 1 Tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp chili flakes
- ½ tsp garlic powder
- Salt & black pepper, to taste
- 1 Tbsp lemon juice
- For the Avocado Smash:
- 1 large ripe avocado
- ½ tsp lemon or lime juice
- Salt & pepper, to taste
- Handful chopped coriander
- To serve:
- 2 slices sourdough, toasted
- Coriander
- Chili flakes, optional
How To Make Spicy Chickpea & Avo Toast
- Heat olive oil in a pan over medium heat.
- Add chickpeas, smoked paprika, cumin, chili flakes, garlic powder, salt, and black pepper.
- Stir and cook for 4–5 minutes, until crispy and golden.
- Squeeze in lemon juice and remove from heat.
- In a bowl, mash the avocado with a fork.
- Mix in lemon juice, salt, black pepper, and chopped coriander.
- Spread the avocado mash evenly on toasted bread slices.
- Top with the warm spicy chickpeas.
- Garnish with extra chili flakes and coriander.
