Cheese and Herb Savoury Muffins

Cooking time: 20 – 25 minutes

Ingredients:

  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • Pinch of salt & pepper
  • 1 tsp mixed dried herbs
  • 1 cup cheddar cheese, grated plus extra for topping
  • 2 large eggs
  • 1 cup buttermilk
  • 1/3 cup oil
  • ¼ cup spring onion
  • Pinch of chili flakes or fresh chili chopped, optional

How To Make Cheese and Herb Savoury Muffins

  1. Preheat oven to 180°C, line a muffin tray with paper liners or grease with cooking spray.
  2. In a large bowl whisk together all the dry ingredients, then stir in the cheese reserving some for the top.
  3. In a separate bowl whisk together all the wet ingredients, pour the wet mixture into the dry mixture, stir gently until just combined.
  4. Spoon the batter evenly into the prepared tray.
  5. Top with cheese and extra herbs.
  6. Bake for 20 – 25 minutes or until golden and a skewer inserted comes out clean.
  7. Remove from the oven once baked and allow it to cool for about 10 minutes on a wire rack before serving.
