
Cheese and Herb Savoury Muffins

Cooking time: 20 – 25 minutes
Ingredients:
- 2 cups flour
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- Pinch of salt & pepper
- 1 tsp mixed dried herbs
- 1 cup cheddar cheese, grated plus extra for topping
- 2 large eggs
- 1 cup buttermilk
- 1/3 cup oil
- ¼ cup spring onion
- Pinch of chili flakes or fresh chili chopped, optional
How To Make Cheese and Herb Savoury Muffins
- Preheat oven to 180°C, line a muffin tray with paper liners or grease with cooking spray.
- In a large bowl whisk together all the dry ingredients, then stir in the cheese reserving some for the top.
- In a separate bowl whisk together all the wet ingredients, pour the wet mixture into the dry mixture, stir gently until just combined.
- Spoon the batter evenly into the prepared tray.
- Top with cheese and extra herbs.
- Bake for 20 – 25 minutes or until golden and a skewer inserted comes out clean.
- Remove from the oven once baked and allow it to cool for about 10 minutes on a wire rack before serving.
