Broccoli and Cheddar Soup

Creamy, cheesy, and comforting!

Cooking time: 20 – 25 minutes

Ingredients:

  • 2 Tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp flour
  • 2 cups chicken or vegetable stock
  • 2 cups milk
  • 1 cup cream
  • 1 head broccoli cut into florets
  • Salt & pepper, to taste
  • ½ tsp mustard powder
  • 1 ½ cups Cheddar cheese, grated

To serve:

  • Grated cheese
  • Croutons

How To Make Broccoli and Cheddar Soup

  1. In a large pot, melt the butter over medium heat.
  2. Add in onions and cook until translucent, then stir in garlic and cook until fragrant.
  3. Sprinkle in the flour and stir until the onions are completely coated with the flour, then slowly whisk the stock, milk, cream and mustard powder.
  4. Simmer over medium heat for 15 – 20 minutes until the broccoli is tender.
  5. For a chunky soup blend half the soup then mix it back in, reduce the heat and stir in cheddar cheese until melted.
  6. Ladle the soup into bowls and top with Croutons.
