
Broccoli and Cheddar Soup
Creamy, cheesy, and comforting!

Serves: 4
Preparation time: 10 minutes
Cooking time: 20 – 25 minutes
Ingredients:
- 2 Tbsp butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 Tbsp flour
- 2 cups chicken or vegetable stock
- 2 cups milk
- 1 cup cream
- 1 head broccoli cut into florets
- Salt & pepper, to taste
- ½ tsp mustard powder
- 1 ½ cups Cheddar cheese, grated
To serve:
- Grated cheese
- Croutons
How To Make Broccoli and Cheddar Soup
- In a large pot, melt the butter over medium heat.
- Add in onions and cook until translucent, then stir in garlic and cook until fragrant.
- Sprinkle in the flour and stir until the onions are completely coated with the flour, then slowly whisk the stock, milk, cream and mustard powder.
- Simmer over medium heat for 15 – 20 minutes until the broccoli is tender.
- For a chunky soup blend half the soup then mix it back in, reduce the heat and stir in cheddar cheese until melted.
- Ladle the soup into bowls and top with Croutons.
