Cheesecake Red Velvet Brownies

The best of both worlds come together for this indulgent treat!

  • Brownie layer:
  • ½ cup butter, melted
  • 3 tbsp cocoa powder
  • Pinch of salt
  • 175g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla essence
  • 2 tsp white vinegar
  • 1 tbsp red food coloring
  • 2/3 cup flour
  • Cream cheese layer:
  • 250g cream cheese
  • 50g granulated sugar
  • 1 egg
  • 1 tbsp lemon zest

How To Make Cheesecake Red Velvet Brownies

  1. Preheat the oven to 180C and line a square pan with parchment paper.
  2. In a large bowl, combine the butter, cocoa powder and salt. Whisk to combine.
  3. Add the sugar, eggs, vanilla, vinegar and whisk until combined.
  4. Add the food coloring, until desired color is reached.
  5. Add flour and fold in gently. Pour the batter into the baking tin leaving ½ cup of batter remaining, smooth the top.
  6. Beat the cream cheese and sugar until smooth.
  7. Add the egg and lemon zest and beat until combined.
  8. Dollop spoonfuls of cheesecake mixture over the brownie batter.
  9. Dollop the remaining batter, then using a knife or skewer, gently swirl the two batters together to get a marble effect.
  10. Bake for 25-30 minutes until the cheesecake filling is set.
  11. Remove from the oven and let the brownies cool completely. Refrigerate for at least 2 hours until firm to cut.
